This Moment: A cupcake for you

A Friday ritual inspired by SouleMama. A single photo no words – capturing a moment from the week. A simple, special, extraordinary moment. A moment to pause, savour and remember.

* I’m not very good at the no-words-business these days.. and now I’m breaking the one-picture-rule as well. Life on the edge, my friends!
But it’s Valentine’s Day. Now, we don’t ‘do’ Valentine’s at our house. But there was a cake sale at school, so we made a batch of cupcakes yesterday. And because they turned out rather popular (testing happened strictly for quality control only), we made another one today. Just for ourselves.
I’d love to share them with you, but unless you have time to pop over for a cup of coffee, you’ll have to make your own (it’s really quick, promise):

Preheat the oven to 180°C. Beat 120g butter and 70g sugar until light and fluffy. Beat in two eggs, one at a time. Fold in 120g self-raising flour. Stir in 2 tbsp milk (today I used sour cream instead because I had some leftover in the fridge) and the grated zest of one lemon.
Spoon tablespoonfuls into cupcake cases. This will be enough for about a dozen.
Bake for 18 minutes or until a skewer comes out clean.

A happy weekend to all of you..
